Honey Heffy


A couple of weeks ago, I finally fulfilled a brewing promise with a friend and coworker. In December, when she started at our office, she requested we brew a porter. Well, the winter got away and with spring (summer?) right around the corner, porter was no longer seasonally appropriate. The batch of choice shifted to a honey hefeweizen. There's a pound of local honey in this batch, which, after sampling during the bottling process, is pretty apparent. I am curious to see if the flavor mellows with time but it's certainly light and appropriate for a warm summer day.
